  • The mean value of iodine content in Japanese pumpkin seeds is 26.45 mg I2/100 g. The results were analyzed statistically using one way ANOVA at a 5% level of significance. The mean values of oil content, acid value, iodine value, specific gravity and refractive index for Japanese type pumpkin were found to be 35.67%, 2.24 mg KOH/g, 26.45 mg I2/100 g, 0.9126 and 1.47, respectively.

  • The obtained low acid value indicated that pumpkin seed oil is suitable for consumption and has long shelf life (Hasan et al., 2019). However, the acid value obtained in this study was below the recommended values of 10 mg KOH/g oil for virgin palm oil and 4 mg/g oil for coconut oil (FAO/WHO, 1999).
